Chef Santanu Brahmachary, Executive Sous Chef at Zilos Jeddah, will oversee the culinary team.
Zilos Jeddah selected Santanu Brahmachary’s new Executive Sous Chef. Focussing on fine dining, foreign cuisine, and banquet catering, Santanu Brahmacharya has refined his skills in different gourmet settings throughout his 19-year career. Working with the esteemed two Michelin-starred Chef Pino Lavarra, his most recent job saw him significantly contribute to increasing the standard of culinary excellence.
Brahmachary’s arrival in Zilos Jeddah marks an intriguing new chapter for the chef and the restaurant, as he wants to provide the city with fresh dining experiences. Under his new guidance, Chef Brahmachary will supervise a diverse group of 35 cooks from all across the globe, guiding them to create exceptional food with a core of Michelin-starred excellence. Having run five restaurants and bars on one of the largest islands in the Maldives, where he efficiently served over 1,000 guests daily and supervised a staff of 132 chefs, his extensive expertise, including this knowledge, has allowed him the means to handle large-scale culinary operations while maintaining the highest standards of quality and creativity.
Leading luxury resorts, pre-opening companies, and upscale dining establishments throughout India, the Middle East, and beyond, Brahmachary’s extraordinary career stands out for its consistency. With an eye on current culinary trends, sustainability, and innovative menu development, his expertise extends fine dining to all-day eating operations.
