Peninsula Hospitality recently brought a taste of Hawaiian culture to Mumbai with the launch of Waikiki, a modern dining experience and tiki bar. The menu was initially created by Executive Chef David Cagle, a seasoned professional with 28 years of experience in the hospitality industry, who joined the Peninsula Group in March 2023. Now, Waikiki is set to enhance its culinary offerings with the appointment of Harpreet Singh Bhatti as its head chef.
A decade ago, Chef Harpreet began his career training at the Taj Mahal Palace in Mumbai, specifically at Wasabi, a restaurant by Chef Morimoto, where he refined his culinary skills under the guidance of Japanese chefs, including Masaki Kobayashi-san. At Waikiki, he will create dishes that capture the vibrant spirit of Aloha. His culinary approach blends Japanese and Hawaiian cuisines, resulting in unique fusions such as robatayaki, a complete charcoal grilling technique. At Waikiki, Chef Harpreet aims to blend traditional flavours with modern techniques to ensure a one-of-a-kind and memorable dining experience.
