The Adolphus in Dallas has appointed Stephan Fitz as its new director of food and beverage.
We are happy to announce Stephan Fitz’s appointment as Director of Food and Beverage at The Adolphus, Dallas’ original address for hospitality. With years of expertise in the field, Fitz is a seasoned leader who will be in charge of the hotel’s banquets, catering services, and five unique dining options. Among these are The French Room, the most famous fine dining restaurant in Dallas; The French Room Bar; City Hall Bistro, a bustling daytime bistro honoring the original location of Dallas’ City Hall; Rodeo Bar, a gritty yet informal Western saloon; and Otto’s Coffee & Fine Foods, a leisurely Viennese coffee destination.
Fitz worked for prestigious hotels in the Southeast as the Director of Food and Beverage before joining The Adolphus. These hotels included The Capital Hilton in Washington, D.C., The Boca Raton in Florida, and Kalahari Resorts & Conventions in Texas. Fitz has also worked in management positions for well-known hotel chains, such as Hilton, Sheraton, Omni, and InterContinental. Fitz, who is originally from Frankfurt, Germany, started his career at the Westin Grand Hotel there before relocating to the US. He obtained his degree in hospitality management from a nearby vocational school.
In addition to managing The Adolphus’ onsite concepts, Fitz will oversee the hotel’s culinary teams—collaborating with the hotel’s executive chef to curate inventive seasonal specials, implementing innovative revenue strategies, and engaging with the general manager to offer exceptional guest experiences—with a dedication to fostering a culture of excellence.
Fitz has a deep love of serving people that goes beyond his work responsibilities. He likes to travel throughout Europe, try new restaurants and bars, and sip premium whiskey in his leisure time.
