Mother’s Oysters + Pies will introduce a unique concept that combines fresh oysters, wood‑fired Neapolitan-style pizza, and Southern coastal cuisine in a lively neighborhood restaurant.

The upcoming restaurant will be located at the Shoppes at Flight Deck plaza on Old Chapin Road, a growing commercial area in Lexington. Designed to bring a fresh culinary concept to the community, the restaurant is expected to become a gathering place for both locals and visitors.

The restaurant is being developed by Jonathan Stambolitis, a local entrepreneur and co‑founder of the development company Purty Property Co. The project reflects the Stambolitis family's long‑standing connection to the Lexington hospitality scene.

Jonathan’s father, Ted Stambolitis, previously established the Flight Deck Restaurant located in the same shopping center, which has been part of the community for decades. This new concept continues the family’s involvement in the local restaurant industry.
