Meet Charles Brown – F&B Leader at Accord Metropolitan Chennai with 20+ Years of Hospitality Excellence


From his beginnings as a trainee steward at Le Meridien Pune to now leading as the Food & Beverage Manager at The Accord Metropolitan, Chennai, R. Charles Brown has journeyed through every rung of the hospitality ladder with resilience, vision, and operational brilliance. His nomination for the People’s Choice – HCP F&B Leader Award 2025 is a salute to his unmatched dedication to service and success.

With over 20 years of dynamic experience in F&B management, Charles is celebrated for his ability to transform outlets into high-performing, guest-loved spaces. He has built his reputation as a detail-oriented professional who understands the pulse of guests and the operational mechanics that make an F&B department thrive.

Promoted to F&B Manager in April 2024, Charles now oversees Accord Metropolitan’s banquets, specialty restaurants, bars, and in-room dining. His leadership has played a pivotal role in enhancing guest delight, team productivity, and profitability across the board. Whether it’s streamlining SOPs, curating marketing campaigns, driving cost control, or executing event-based promotions, Charles leads with a blend of strategic thinking and hands-on mentorship.

Before stepping into his current role, he served as the Assistant F&B Manager for nearly 8 years at Accord, managing 6+ outlets including Royal Indiana, OPM Lounge, and the hotel’s coffee shop. He was instrumental in training programs, revenue budgeting, and LQA-based service audits that raised operational benchmarks.

Charles’ experience also spans international exposure. As Restaurant Manager for Keita Catering Services in Abu Dhabi, he managed high-volume operations with a strong focus on hygiene, safety, and client satisfaction. His earlier stints with Dolci Hospitality Innovations, Billion Smiles Hospitality, and Tusker Entertainment Pvt. Ltd. laid the groundwork for his future leadership success.

Fluent in English, Hindi, and Tamil, Charles is known for being a team builder, mentor, and guest-focused innovator. His track record includes multiple accolades such as Best Employee of the Year (2013) and Employee of the Month (2008).
