KRAKÓW, May 27, 2026 — The MICHELIN Guide unveiled its Poland 2026 selection at an exclusive ceremony held at the ICE Kraków Congress Center on Tuesday, announcing four new One MICHELIN Star restaurants and raising Poland's total number of starred establishments to 10, a milestone reached in the same edition that marks the guide's first-ever countrywide coverage of Poland.

The 2026 edition now recognizes 196 restaurants across the country, up from 108 in 2025, with the guide's inspectors extending their reach for the first time to cities and regions not previously included in the Poland selection, spanning Szczecin in the west to Lublin in the east, and Gdańsk in the north to Zakopane in the south.

The four new starred restaurants span three cities, Warsaw, Wrocław, and a fourth location, and reflect the continued diversification of Poland's fine dining landscape beyond its historic concentration in Kraków and the capital.

BABA in Wrocław Earns First MICHELIN Star After 2025 Bib Gourmand

BABA in Wrocław moves from a Bib Gourmand in the 2025 edition to a full One MICHELIN Star in 2026, a promotion that reflects consistent development in the kitchen under Chef Beata Śniechowska, whose cooking draws on traditional Polish dishes and reinterprets them with assurance and subtlety.

The inspectors noted Śniechowska's ability to serve complex dishes in a relaxed, high-energy setting, a combination that allows the restaurant to operate as both a neighbourhood destination and a serious culinary address. The kitchen's signature "Petit Bonbon" take on pierogi was cited as a highlight of the inspector visits, illustrating the approach of taking deeply familiar Polish food and elevating it through careful technique and flavour layering without losing the dish's identity.

Most in Wrocław Wins Star for Intimate Tasting Menu Concept

Also in Wrocław, Most earns its first MICHELIN Star for a format that leans entirely on the quality of its cooking to carry the experience. Tucked within the Między Mostami brasserie, Most operates as an intimate restaurant-within-a-restaurant, with Chef Łukasz Budzik leading a tasting menu that the guide describes as deliberately opaque, single-word dish descriptions that give almost nothing away about the technical complexity behind each course.

The inspectors found that the cooking delivered consistently on the promise of high-quality sourcing, with ingredients brought together in combinations that were both inventive and coherent. A dish of porcini mushroom with potato, parmesan, and truffle was specifically noted as a standout during inspector visits. Wrocław, added to the Poland guide for the first time only in 2025, now holds two MICHELIN-Starred restaurants in its second year of inclusion, a rate of development that reflects genuine momentum in the city's dining culture.

Alon Omakase Becomes Poland's First Japanese MICHELIN Star Restaurant

In Warsaw, Alon Omakase earns Poland's first ever MICHELIN Star for a Japanese restaurant, bringing an Edomae sushi format to the guide's starred tier for the first time in the country's history. Chef Alon Than leads a team that the inspectors described as technically precise, noting the knife skills and flavour calibration applied to seafood sourced from across the globe, enhanced through considered seasoning and creative additions rather than heavy technique. The langoustine nigiri with lime was singled out by the inspectors for the clarity and purity of its execution.

A Fourth New Star Recognizes Bold Polish Culinary Reinvention

The fourth new starred restaurant recognized in the 2026 edition was awarded for a concept built around a creative reinterpretation of Polish cuisine. Chef Ziemowit Owczarz's cooking impressed the guide's inspectors with its technical accomplishment and balance, delivering dishes that the guide described as both stylistically confident and substantively achieved rather than prioritizing presentation over flavour.

Bottiglieria 1881 Retains Two MICHELIN Stars; Eliksir Holds Green Star

Kraków's Bottiglieria 1881 retains its Two MICHELIN Stars for another year, maintaining its position as Poland's most decorated restaurant. All six previously starred restaurants hold their distinctions in the 2026 edition: Arco by Paco Pérez in Gdańsk, Giewont in Kościelisko, Muga in Poznań, and NUTA, hub.praga, and Rozbrat 20 in Warsaw.

Eliksir in Gdańsk retains the MICHELIN Green Star it holds as Poland's only restaurant in that category, recognized for its low-waste philosophy, local sourcing from the Pomerania region, and the sustainable practices led by chef Paweł Wątor and co-owner Mateusz Trzeciak.

19 New Bib Gourmands Bring Poland's Total to 38

The 2026 edition adds 19 new Bib Gourmand restaurants, the guide's award for high-quality cooking at accessible prices, raising Poland's total to 38. Several of the new Bib Gourmands come from regions covered by the guide for the first time in 2026. In Białystok, Kwestia Czasu and NAGO both received recognition, as did KRZYWA Sztuka Wina in Katowice, where in-house cured meats are a feature of a wine-focused menu. In Warsaw, new Bib Gourmands include Blisko Bar, WIN wine bar and shop, WANDAL, and AHAAN. In Kraków, Nat Bistro and Bufet KRK, the younger sibling of Bottiglieria 1881, joined the Bib Gourmand tier, alongside Pijalni in Wrocław and Brut Bistro in Gdańsk.

WANDAL Takes MICHELIN Opening of the Year Award for 2026

Four Special Awards were announced at the ceremony alongside the star and Bib Gourmand announcements. WANDAL in Warsaw received the MICHELIN Opening of the Year award, recognized for a concept built around the idea of rewriting the conventions of Polish cuisine with bold yet refined flavours. The restaurant's black pudding dumplings with crayfish XO were cited among the dishes that illustrated the kitchen's approach of pairing creative instinct with respect for tradition.

The full MICHELIN Guide Poland 2026 selection is available on the guide's official website, covering all 196 recognized restaurants across Poland's cities and regions.
