A Culinary Journey Spanning Continents
Chef Uttam Das has cultivated an impressive portfolio over the years, leading teams and creating exceptional dining experiences in both Indian and international kitchens. Prior to this appointment, he served as Executive Chef at The Indian Hotels Company Limited (IHCL) in Bhubaneswar, where he was known for his innovative approach to regional cuisine and operational leadership.
His international exposure includes a key role as Senior Sous Chef at Sun Siyam Olhuveli in the Maldives, where he embraced island-inspired cuisine while managing high-volume, luxury dining operations. At Marriott International, he held multiple critical roles including Head Chef in Visakhapatnam, Executive Sous Chef in Chennai, and Sous Chef in Hyderabad, each contributing to his strong foundation in both Western and Indian gastronomy.
Strong Roots in Hospitality
Chef Uttam began his culinary journey as a Commis Chef at Holiday Inn Resort Goa. He then joined The Leela Palaces & Resorts in Goa, progressing from Commis 1 to Chef De Partie, further refining his culinary and leadership skills. His early international stint as Demi Chef De Partie at Olhuveli Beach and Spa Resort in the Maldives provided him with an invaluable global outlook on hospitality.

A diploma holder in Hotel Management from CIHM Bhubaneswar, Chef Uttam is known for his attention to detail, creative flair, and guest-focused dining concepts.
