Chef brings two decades of experience in Luxury patisserie across luxury hotels in India and international markets.Chef Manikandan Sivamoorthy will now lead bakery and Dessert team of the resort.

Chef Manikandan Sivamoorthy will oversee all pastry and bakery operations across the property. He is responsible for designing and executing dessert menus for restaurants, banqueting, in-room dining, and special events.
He will also ensure consistency in product quality, presentation, and service delivery across multiple outlets.The role requires close coordination with culinary teams to align pastry offerings with the resort’s broader dining strategy.
Technical Expertise in Pastry and Bakery
Chef Manikandan brings deep technical skills in pastry and bakery art. His skills include artisan breads, laminated viennoiserie, plated desserts, chocolate sculpting, and sugar artistry. He combines classical pastry techniques with modern innovation, focusing on precision, flavour balance, and presentation.
He is expert in handling large-scale pastry production in high-volume environments, including banqueting operations and multi-outlet service formats.
Chef Manikandan Sivamoorthy: a Chefs Journey
Before joining JW Marriott Prestige Golfshire Resort & Spa, Chef Manikandan served as Executive Pastry Chef at Fairmount Udaipur Palace. He led pastry operations for a large-format property with extensive banquet facilities.
He held senior pastry leadership positions at Shangri-La Group and Jw Marriott Hotels. Managing daily pastry functions across multiple dining venues and developing contemporary dessert menus.
International Exposure and Pre-opening Experience
Chef Manikandan’s career has taken him across the globe, with international roles in the Maldives, Mongolia, and Seychelles. These roles provided exposure to diverse culinary environments and guest preferences, shaping his global perspective on pastry craftsmanship.
Chef Manikandan is a veteran of pre-opening hotels, having launched projects in Hyderabad, Chennai, Mumbai, and Kochi. He supported the setup of pastry kitchens, production systems, and operational frameworks for new hospitality properties.
