LONDON, May 28, 2026 — Miami's Coyo Taco, the Wynwood-born taco chain co-founded by Coyoacan native Alan Drummond alongside Sven Vogtland and chef Scott Linquist, stages a free pop-up event at Hoxton Arches in East London on Wednesday, June 3, giving Londoners their first opportunity to try the brand ahead of its first permanent UK restaurant opening in The Broadway, St James' Park later this month.
The event runs from 6pm to 9pm, or until supplies run out, at Arch 402, Cremer Street, London E2 8HD, and will distribute hundreds of tacos and frozen margaritas at no charge to attendees. A live DJ plays through the session, reflecting the Miami music and arts culture the brand has embedded into its restaurant format since its founding in the Wynwood neighbourhood.
Coyo Taco, which has attracted a following that includes high-profile Miami residents and visitors, is entering the UK market with plans for 50 locations nationwide following the initial London opening.
What Coyo Taco Will Serve at the Hoxton Arches Pop-Up
The centrepiece of the pop-up menu is Coyo Taco's beef birria, a preparation built around the brand's "todo es fresco" philosophy, which translates as "everything fresh." Tortillas are hand-pressed to order on site in the method used at the brand's Coyoacan-style operations, then dipped in a slow-cooked broth before being filled with tender beef, white onion, and coriander, finished with a squeeze of lime and a melted cheese crust.
A vegetarian option is also on offer: grilled cauliflower in a rich pumpkin mole, served in a cheese-crusted flour tortilla with hard aged cheese, pickled onion, and avocado. Both tacos are served alongside Coyo Taco's frozen margaritas, the brand's signature drink format, while the DJ set maintains the Miami atmosphere the pop-up is designed to deliver.
The hand-pressing of tortillas on site is a deliberate display of the kitchen process that distinguishes Coyo Taco from fast-casual taco formats that rely on pre-made shells, a point of difference the brand has used consistently to position its food as authentically Mexican in origin despite its Miami setting.
Coyo Taco's UK Expansion Plan and London Restaurant Opening
The Hoxton pop-up serves as a public preview of Coyo Taco's UK debut, which will take the form of a permanent restaurant at The Broadway in St James' Park, opening in June 2026. The St James' Park location places the brand's first UK site in one of London's most visited public destinations, giving it immediate access to a large and diverse footfall base from its first day of trading.
Beyond the initial London site, Coyo Taco has announced plans for 50 stores across the United Kingdom, an expansion ambition that would establish the brand as one of the more significant Mexican restaurant rollouts in British hospitality in recent years. The phasing and timeline for those additional locations beyond the first site has not yet been detailed publicly.
Coyo Taco's Origins in Miami's Wynwood Neighbourhood
Coyo Taco was founded in Miami's Wynwood arts district, a neighbourhood internationally recognised for its street art, independent food culture, and music scene. Alan Drummond, who was born in Coyoacan, the historic Mexico City neighbourhood that gives the restaurant its name, brought an authentic Mexican culinary foundation to the Miami format, combining it with Wynwood's art-forward atmosphere and the city's appetite for music-driven hospitality experiences.
Chef Scott Linquist leads the culinary programme, maintaining the freshness-first philosophy across the menu. The brand's Miami locations have attracted a following among the city's residents and regular visitors, including internationally recognised figures who have referenced the restaurant publicly.
The Coyo Taco Hoxton Arches pop-up takes place on Wednesday, June 3, 2026, from 6pm to 9pm at Arch 402, Cremer Street, London E2 8HD. Admission is free and tacos and frozen margaritas are complimentary while stocks last. No advance booking is required.
