MUMBAI, June 6, 2026 — Another LPG price hike tightens margins for restaurants across India, pushing menu prices higher and forcing kitchens to shift away from traditional gas-fired cooking.
The increase in commercial LPG rates this month adds fresh pressure on an industry already grappling with rising food, rent and labor costs, operators say.
LPG price hike strains restaurant operations
Restaurant owners report that cooking fuel now accounts for a significantly larger share of monthly operating expenses, particularly for high-volume kitchens that rely on multiple commercial cylinders each day.
“Every price revision chips away at profitability,” said Riya Malhotra, founder and director of a mid-scale Mumbai dining chain. “Passing costs to customers is not always possible, but absorbing them is no longer sustainable.”
Menus adjust as costs climb
Several restaurants have begun recalibrating portion sizes or selectively increasing prices on fuel-intensive dishes such as tandoor items and slow-cooked gravies.
Industry executives say frequent LPG price hikes make long-term menu planning difficult, especially for outlets operating on fixed-price contracts with food delivery platforms.
Tandoors give way to induction and electric cooking
To counter fuel volatility, many new-age kitchens are switching to induction cooktops, electric ovens and combination equipment that reduce dependence on LPG.
“Electric cooking offers predictable energy costs and easier compliance,” said Anil Chopra, operations head at a national casual dining brand. “While the initial investment is higher, the long-term savings are becoming clearer.”
Smaller outlets feel the heat most
Single-location restaurants and neighborhood eateries face the sharpest impact, as they lack the scale to negotiate bulk energy contracts or absorb repeated cost shocks.
Industry associations warn that continued increases could accelerate closures among small operators or push more kitchens into informal cost-cutting measures.
Outlook remains uncertain
With LPG prices revised regularly and global energy markets remaining volatile, restaurant owners say pricing stability is unlikely in the near term.
Fuel costs for commercial users are revised by state-run oil companies including Indian Oil Corporation, based on international benchmarks.
