Doc Crow’s to Open Indianapolis Restaurant at Hyatt Place, Create 75 Jobs
Louisville-based Doc Crow’s Southern Smokehouse & Raw Bar will open in downtown Indianapolis in May, featuring 750+ bourbons and creating over 75 jobs.
Doc Crow’s Southern Smokehouse & Raw Bar, a Louisville-based restaurant known for its Southern barbecue and extensive bourbon program, is set to open a new location in downtown Indianapolis in May 2026. The restaurant will be located at the Hyatt Place Indianapolis Downtown at 130 South Pennsylvania Street, Suite B, and is expected to generate more than 75 jobs across various roles.
The expansion marks the brand’s entry into the Indianapolis market, bringing its established menu and beverage offering into a city with a rapidly growing downtown dining scene. The new outlet will replicate key elements of the Louisville flagship while introducing localized menu additions tailored to Indianapolis diners.
New Location Anchored at Hyatt Place Indianapolis Downtown
The upcoming Doc Crow’s restaurant will operate within the Hyatt Place Indianapolis Downtown, positioning the brand in a high-traffic hospitality and business district. The site includes indoor dining areas, an outdoor patio, a dedicated bar space, and private dining rooms designed to accommodate group events and functions.
This multi-format layout reflects a full-service dining model aimed at capturing a mix of local customers, hotel guests, and event-driven traffic. The integration within a hotel property also supports consistent footfall and aligns with broader industry trends of restaurant-hotel partnerships to maximise utilisation of prime urban spaces.
Menu Combines Core Offerings With Local Adaptations
According to company officials, the Indianapolis menu will closely follow the Louisville location’s core offering, centred on Southern-style barbecue. The food program will highlight house-made barbecue sauces and signature dry rubs, forming the foundation of its smoked meat dishes and comfort food selections.
In addition to its established menu, the restaurant will introduce “Indy-inspired” items and exclusive offerings specific to the new location. While details of these additions have not been disclosed, the approach indicates a localisation strategy designed to align the brand with regional tastes and preferences.
The balance between a standardised core menu and localised elements is increasingly common among expanding restaurant brands seeking to maintain identity while adapting to new markets.
Bourbon Program Features Over 750 Options
A defining feature of Doc Crow’s concept is its extensive bourbon collection, which will be carried forward to the Indianapolis outlet. The bar program will include more than 750 bourbon options, incorporating Indiana-produced spirits alongside regional and national selections.
This large-scale beverage offering positions the restaurant within the premium casual dining segment, where curated drink programs play a significant role in customer experience and revenue generation. The inclusion of local spirits also aligns with growing consumer interest in regional sourcing and craft beverage culture.
The bar area is expected to serve as a central component of the venue, supporting both standalone visits and complementing the food offering.
More Than 75 Jobs to Be Created Across Roles
The new restaurant is projected to create over 75 jobs, spanning front-of-house service, kitchen operations, and management positions. Hiring efforts are currently focused on building a full operational team ahead of the May opening.
The scale of recruitment reflects the size and scope of the outlet, which includes multiple dining formats and extended operating hours. The restaurant will be open from 11 a.m. to 10 p.m. Sunday through Thursday, and until 11 p.m. on Fridays and Saturdays.
Job creation associated with new restaurant openings continues to be a key economic factor in urban hospitality markets, particularly in central business districts where dining demand is driven by both residents and visitors.
Expansion Targets Growing Indianapolis Dining Market
Doc Crow’s decision to enter Indianapolis comes as the city’s downtown food scene continues to expand, attracting both independent operators and established brands. The move signals confidence in the market’s capacity to support concept-driven restaurants with strong identity and differentiated offerings.
In a statement, regional director of operations Justin Bensel said the company aims to create a welcoming environment combining food, bourbon, and hospitality, noting that the timing aligns with the city’s ongoing growth as a dining destination.
The Indianapolis opening represents a strategic extension of the brand beyond its Louisville base, leveraging its established reputation in Southern barbecue and bourbon to enter a new urban market. With construction and hiring underway, the restaurant is preparing to begin operations in May 2026, adding another player to the city’s competitive casual dining segment.
