INDIANAPOLIS, June 3, 2026 — Milktooth, the celebrated brunch restaurant at 534 Virginia Ave. in downtown Indianapolis, will return to its original menu and identity starting Thursday, June 5, after owner Jonathan Brooks announced Tuesday night that he is abandoning the "Arlene's" meat-and-three rebrand he launched roughly one month ago. Brooks cited poor sales figures as the reason for reversing course, telling customers through a Facebook post that the new concept was not financially sustainable and that he was setting aside personal attachment to the idea in favour of giving diners what they came to Milktooth for in the first place.

The announcement ends one of the more closely watched identity experiments in Indianapolis dining in recent years and restores a restaurant that Bon Appétit named one of the 10 Best New Restaurants in America in 2015, the year after it opened, to the brunch format that built its reputation over more than a decade.

Milktooth Drops Arlene's Rebrand After One Month Due to Poor Sales

Brooks announced in December 2025 that Milktooth would be rebranded as "Arlene's," a meat-and-three concept named in tribute to his mother. The meat-and-three format a Southern dining tradition in which customers pay a set price for a main meat entree alongside three side dishes of their choosing was a departure from Milktooth's signature all-day brunch identity. The rebrand also called for the restaurant to stop serving brunch, the very offering that had defined it since its 2014 opening.

The Arlene's concept operated for approximately one month before the sales numbers made its future untenable. Brooks addressed the situation with direct candour in his Facebook post Tuesday. "WELP we done gave the @arlenesmeatandthreeindy thing a try the last month," he wrote. "To be totally transparent, the sales have been horrendous and we simply can't survive going forward with that plan. I'm super super disappointed as I was in love with the food and concept but I'm putting my ego aside and giving the people back what they want."

The post confirmed that Milktooth "will be back in full effect this Thursday and for the future." Brooks also thanked his staff for their commitment during the transition. "Love you all," he wrote. "And the most love to my wonderful employees who joined me out on the limb! Never be afraid to take a chance!! See ya soon for brunch!"

Original Milktooth Brunch Menu Returns with Some Arlene's Items Preserved

The return to Milktooth does not erase everything that came from the Arlene's experiment. Some items developed during the meat-and-three period will remain on the menu, including the fried chicken and sausage casserole dishes that apparently earned customer favour even as the broader Arlene's concept failed to generate the sales volume needed to sustain the operation.

The decision to carry select Arlene's dishes forward reflects a practical outcome of concept experiments that do not survive in their original form but leave something useful behind. For Milktooth regulars, the retention of these items offers a tangible trace of the restaurant's brief detour while the core brunch identity the menu that drew national attention and built the loyal following Brooks was effectively counting on when he reversed course reasserts itself.

Milktooth's History Made the Rebrand Reversal a Significant Local Story

The stakes of the Arlene's experiment were high precisely because of what Milktooth had become before it. Brooks opened the restaurant in 2014 at the Virginia Avenue address in Fletcher Place, and the following year Bon Appétit's national best-new-restaurants designation placed it on a map far beyond Indianapolis. Brooks has been named a James Beard Award semifinalist three times, a recognition that positioned him among the most watched independent chefs in the country's mid-size cities.

The restaurant retained all of its staff during the Arlene's period a decision that shielded workers from the operational disruption of the rebrand and that Brooks acknowledged directly in his farewell-to-Arlene's post. The staff continuity meant that when the decision came to return to Milktooth, the team required no rebuilding the kitchen and front-of-house that had operated through the transition were ready to resume the brunch service they had spent years executing.

Milktooth Reopens Thursday with Its Standard Brunch Hours

Milktooth returns to service Thursday through Monday from 10 a.m. to 3 p.m. at 534 Virginia Ave. in downtown Indianapolis. No changes to the restaurant's operating schedule were announced alongside the rebrand reversal. The restaurant does not take reservations for standard service; guests arrive and are seated as tables become available, a policy consistent with the casual, walk-in character that defined the dining experience during Milktooth's original run.

For Indianapolis diners who waited out the Arlene's period, Thursday's reopening arrives quickly after a Tuesday announcement a turnaround that suggests the kitchen's return to Milktooth preparation required no extended ramp-up time and that Brooks was ready to move back to brunch as soon as the decision was made.
