This is Onóra Dublin, a new all-day neighbourhood restaurant confirmed through Hospitality & Catering News' reporting this week.

The July and Dublin hospitality group Bereen Brothers are partnering to open Onóra on Capel Street this October, marking the first time Conor and Marc Bereen's established restaurant portfolio, which already includes Coppinger, Orwell Road, Row Wines, and Charlotte Quay, extends north of the Liffey.

The Bereen Brothers are working directly with The July on Onóra's food and drink direction, service style, and broader approach to hospitality, with the restaurant intended to function as a genuine neighbourhood destination for both local residents and visiting guests alike. Marc Bereen spoke to the collaborative spirit behind the project. "Developing Onóra in partnership with The July has allowed us to introduce their team to the incredible culinary scene we have here in Dublin, and across the island," he said. "Our shared vision is to create a great restaurant that adds something to the city's dining culture, defined by exceptional produce, simple food, perfect execution and genuine hospitality. A place where locals and visitors come together and everyone belongs." Leading the kitchen is Northern Ireland-born Head Chef Lauren Shimmin, who will work alongside The July and Bereen Brothers teams to develop menus centred on Irish produce paired with European influences. That combination, local sourcing filtered through broader continental technique, positions Onóra within a growing movement among Dublin's newer restaurants to foreground Ireland's own agricultural strengths rather than treating them as a secondary consideration.

Lunch service will feature dishes including salt cod croquettes, mussels served with fries, and roast porchetta finished with salsa verde, offering a menu built around approachable comfort rather than elaborate technical display. The design draws specific reference from Irish designer Eileen Gray, paired with artwork sourced from local artists, grounding the space visually in Irish creative heritage rather than importing a generic international aesthetic.

Sustainability Built Into the Building Itself

Onóra forms part of the wider The July Dublin building, which holds BREEAM Excellent certification, a recognised standard for sustainable building performance. Sustainability measures throughout the property include an all-electric energy system, solar power generation, and the deliberate use of non-toxic materials throughout construction and finishing, positioning environmental responsibility as a structural feature of the project rather than a marketing afterthought layered on at the end.

Melanie Nocher, General Manager of The July Dublin, explained the specific reasoning behind choosing this particular location. "Capel Street has such a distinctive soul, energy, and rich history, making it the perfect home for Onóra at The July," Nocher said. "We didn't want to create just another hotel or another hotel restaurant; we wanted to build a genuine neighbourhood destination where guests and locals naturally come together, creating a space that feels comfortable, effortless, and alive from day one."

That explicit rejection of the standard hotel restaurant formula, formal, somewhat disconnected from its immediate surroundings, reflects a broader shift increasingly visible across independent hospitality openings this year, where operators deliberately position new restaurants as neighbourhood fixtures rather than isolated destinations, a philosophy echoed in distinctly different but equally identity-driven concepts elsewhere, including the committed theming behind Zero Bar & Grille's year-round Halloween concept in Portland, Maine, where genuine local character similarly takes precedence over generic, universally safe appeal.

Part of a Broader Autumn Opening Season

Onóra's October debut arrives alongside several other notable UK and Irish restaurant openings this autumn, including B. Penhale in Farringdon from the Camille team, a second Bistro Sablé location from Noble Inns in Shoreditch, and Mirtala's recent Northern Mexican-influenced opening in Chiswick. Together, these openings suggest a genuinely active season for independently led, neighbourhood-focused dining concepts across the British Isles, each building its own distinctive identity rather than following a shared formula.
