CREWE, England, May 21, 2026 — The Royal Saffron, the Indian fine dining restaurant that opened on Earle Street in Crewe town centre at the end of December 2025, is drawing attention for a menu built around regional Indian cooking styles, with dishes drawing from Goan coastal traditions, Mughlai imperial cuisine and South Indian Kerala technique.

The restaurant occupies the former Crown Hotel building on Earle Street, opposite Memorial Square, and is run by a four-person team, all born in India and previously based in Leeds, with experience in Michelin-level kitchens and five-star hotels across the world.

The Royal Saffron's Coastal Dishes Lead the Signature Menu

Two dishes inspired by India's western coastline sit among the restaurant's most requested plates. A Goan fish curry, developed over several months by the kitchen team, aims to balance the sharp, sour flavours associated with Goan cooking with layered spice and aromatic depth. A companion king prawn curry focuses on rich seafood flavour with aromatic balance rather than chilli heat.

Both dishes were refined to reflect the tart and sweet-spice character of coastal Indian cuisine, a style that differs significantly from the richer, creamier curries more familiar to British diners.

Kerala Beef Curry Uses Traditional Varutharacha Method

Among the kitchen's most labour-intensive preparations is the Kerala beef curry, built using the traditional Varutharacha cooking method. The process begins with fresh grated coconut dry-roasted with whole spices until deep golden brown, then ground into a smooth paste.

That paste forms the base of a gravy combining black peppercorns, cloves, green cardamom and fresh curry leaves. Premium Aberdeen Angus beef — the restaurant sources its beef exclusively from Aberdeen Angus cattle — is then slow-braised in the sauce for three to four hours. The kitchen describes the finished dish as comfort food elevated to fine dining, served with flaky porottas or fragrant rice.

Mughlai Korma Avoids Artificial Sweetness

The Mughlai chicken korma draws from a culinary tradition historically associated with the imperial kitchens of the Mughal Empire. Rather than relying on cream or added sugar for its mild character, the Royal Saffron version uses ground cashew nuts and slow-cooked onions to build natural richness.

The recipe combines chicken with toasted fennel, ground coriander and green cardamom. The result produces a softer aromatic flavour profile weighted toward fragrance rather than heat, in keeping with the Mughlai emphasis on aroma, texture and ingredient quality.

Saffron Scallops Anchor the Seafood Starters

A starter of saffron scallops represents the restaurant's premium seafood offer at the lighter end of the menu. Pan-seared king scallops arrive in a saffron-infused cream sauce, with the kitchen aiming to balance the natural sweetness of fresh scallop with rich, floral aromatic flavour.

The dish sits alongside a broader starters list that includes onion palak bhaji, zafrani paneer tikka, Hyderabad lamb samosas and tandoori tiger prawns, reflecting the kitchen's span across both vegetarian and meat preparations.

Sourcing and Kitchen Philosophy Underpin the Menu

Ingredient sourcing is central to the restaurant's approach. Chicken is supplied by British farmers, lamb is grass-fed and imported from New Zealand, and seafood is sustainably sourced and prepared fresh. The kitchen team carries over 15 years of combined experience in five-star hotels and international cruise ship operations.

The Royal Saffron, located at 25 Earle Street, Crewe, CW1 2BH, is open Sunday, Monday, Wednesday and Thursday from noon to 2.30pm and 5pm to 9.30pm, and Friday and Saturday from noon to 2.30pm and 5pm to 10pm.
