Zambrero Targets Coventry for Expansion, Plans 12 UK Openings and 180 Jobs
Mexican franchise Zambrero plans 12 new UK restaurants, targeting Coventry and creating 180 jobs as part of its West Midlands expansion strategy.
Mexican fast-casual franchise Zambrero is targeting Coventry as part of a broader UK expansion plan that will see the brand open 12 new restaurants over the next three years, creating approximately 180 jobs across full- and part-time roles.
The expansion will mark the company’s entry into the West Midlands, with Coventry identified as a key location alongside Leamington Spa and Stratford-upon-Avon. The move builds on Zambrero’s steady growth in the UK market since its launch in London in 2021.
Expansion Plan Targets 12 New UK Sites
Zambrero’s development strategy outlines the addition of 12 new outlets nationwide within a three-year timeframe. The planned openings are expected to generate around 180 jobs, reflecting the brand’s continued investment in scaling its UK footprint.
The West Midlands has been selected as a priority region for the next phase of growth, with Coventry positioned as a central hub for expansion. The company has also identified nearby Warwickshire towns as part of its site pipeline, indicating a cluster-based approach to regional development.
Since entering the UK market in 2021, Zambrero has grown to 14 locations across cities including London, Manchester, Birmingham, Reading, Essex and Glasgow. The planned additions will significantly increase its national presence.
Franchise Model Drives Growth Strategy
To support its expansion, Zambrero has appointed development agents James Fleck, Michelle Jelfs and Sarah Preston. Their role will focus on identifying suitable sites and recruiting franchise partners to operate new locations.
According to the company, the expansion will rely on attracting both new and experienced franchise operators, including single-site owners, multi-site operators and corporate partners. This franchise-led model is central to Zambrero’s growth strategy in the UK market.
In a statement, development agent James Fleck highlighted the brand’s positioning within the hospitality sector, citing its food offering, restaurant design and operational model as key factors supporting its expansion trajectory.
Menu Offering and Brand Positioning
Zambrero operates within the fast-casual dining segment, offering a menu centred on Mexican-inspired dishes. Its core products include burritos, tacos, quesadillas and loaded nachos, with customizable fillings such as pulled pork, chipotle chicken, barbacoa beef and vegetarian options.
The brand’s menu structure allows customers to tailor meals based on protein, toppings and sauces, aligning with broader consumer demand for flexible, build-your-own dining formats. This approach has been a defining feature of its positioning in competitive urban markets.
The company describes its concept as a “feel good Mex menu,” combining quick-service efficiency with a focus on fresh ingredients and modern restaurant environments.
Regional Growth Amid Wider Market Shifts
Zambrero’s expansion comes at a time of mixed conditions within the UK restaurant sector, where growth opportunities in some regions contrast with closures elsewhere. The targeting of Coventry and surrounding areas reflects ongoing demand for new dining options in regional markets beyond major metropolitan centres.
The strategy also highlights the continued appeal of franchise models in the foodservice industry, enabling brands to scale operations while sharing investment and operational responsibilities with local partners.
At the same time, the broader market remains dynamic. In a separate development, Caribbean-inspired chain Turtle Bay has announced the closure of its Swansea restaurant after nearly a decade of operations, underscoring shifting market conditions and evolving consumer demand.
Current Footprint and Next Steps
With 14 restaurants currently operating across the UK, Zambrero is entering a new phase of growth focused on regional penetration and franchise expansion. The identification of Coventry as a target location signals the company’s intention to strengthen its presence outside its existing core markets.
The timeline for individual site openings in the West Midlands has not been specified, but the overall three-year plan provides a framework for gradual rollout. Recruitment of franchise partners and site acquisition are expected to drive progress in the coming months.
The expansion reinforces Zambrero’s ambition to establish a broader national footprint while leveraging its franchise model to support long-term growth in the UK foodservice sector.
