Courtyard Mumbai Airport Names Rohin Thankappan Executive Chef

MUMBAI — Courtyard by Marriott Mumbai International Airport has appointed Rohin Thankappan as Executive Chef, placing an 18-year culinary professional in charge of the hotel's restaurants, banqueting and in-room dining operations.

The appointment comes as the property holds ISO 14001:2015 certification for Environmental Management.

Thankappan's career spans business hotels and resort destinations across India and international markets, where he has led culinary teams and contributed to various dining formats. His background includes participation in international culinary events and collaborations.

His culinary approach centres on ingredient-led cooking, combining classical techniques with contemporary practices, with a focus on seasonal ingredients, regional influences and sustainable kitchen practices including responsible sourcing and waste reduction.

New Role Covers Menu Development, Kitchen Operations and Team Development

In his new position, Thankappan will oversee menu development, kitchen operations and consistency across food and beverage offerings at the property. He will also focus on team development and strengthening culinary standards across the hotel's dining division.
