Hyatt Luxury Hotel Expansions in Mexico and the Caribbean 2026 are taking shape as Hyatt Hotels Corporation enters the final quarter of the year. The company is adding hotels under its Park Hyatt, Unbound Collection, Alila and Grand Hyatt brands. Most of the activity centres on Mexico, with additions in Canada and the Caribbean as well. Tamara Lohan, Hyatt's Global Brand Leader for Luxury, said the company wants to grow thoughtfully and give travellers more choice.

Hyatt Luxury Hotel Expansions in Mexico and the Caribbean 2026 Start with Park Hyatt

Park Hyatt Cabo del Sol opened in December 2025 as the brand's first hotel in Mexico. It sits on the coast of Baja California Sur and uses contemporary Mexican architecture. The resort offers oceanfront dining and a wellness program shaped by the landscape. It is the first of three Park Hyatt properties planned for the country.

Park Hyatt Riviera Maya is expected to open by the end of 2026 on a secluded stretch of the Caribbean coast. It will be the first all inclusive Park Hyatt in the world. Guests will receive personalised pre arrival planning and a fully a la carte dining setup. Park Hyatt Mexico City Polanco is due in spring 2027 on Campos Eliseos, with 155 rooms and suites overlooking Chapultepec Park.

The Unbound Collection by Hyatt Grows

The Clayfield has joined The Unbound Collection in Niagara on the Lake, Ontario. Its design takes cues from the region's clay rich soil and nearby vineyards. Warm earth tones, natural materials and tactile finishes run through the property. It is positioned as a wine country retreat.

Impression Isla Mujeres will join the collection on November 2. This adults only, all inclusive resort offers suite led accommodation and butler service. Hyatt also plans an experiences program for the collection this year. It will include private culinary and wine outings and behind the scenes access to local artists and makers.

Alila Mayakoba and Grand Hyatt Add New Locations

Alila Mayakoba joined the Alila portfolio in February 2026. The resort covers 60 acres of beach, lagoon and jungle on the Riviera Maya. It has 182 guestrooms, suites and villas, six dining venues and a spa. Regional artisans contributed to the design, and local practitioners helped shape the wellbeing program.

It is one of four Alila hotels in the Americas. All four joined the Erewhon Member Lifestyle Collective on October 1. Hyatt says the move introduces Alila to people who value wellbeing and intentional living.

Grand Hyatt has three openings planned for the fourth quarter of 2026. These are Grand Hyatt Grand Cayman, Grand Hyatt Cancun and Grand Hyatt Los Cabos. The Cancun and Los Cabos hotels will bring all inclusive stays to the Grand Hyatt brand in the Americas. These additions strengthen the new luxury hotels in Mexico 2026 pipeline.
