SAINT-TROPEZ, France, June 1, 2026 — Dior reopened its Saint-Tropez boutique on Monday with a refreshed interior and two new dining experiences designed by three-Michelin-starred chef Mauro Colagreco, marking one of the most ambitious pairings of a luxury fashion house and a world-class culinary name to take place on the French Riviera this season.
The boutique, housed inside a historic country house, had closed for renovations in November 2024. Its reopening introduces Le Café Dior, a permanent outdoor café, and Monsieur Dior, a seasonal pop-up restaurant running from June 8 through October that will seat guests under pastel-colored parasols in the boutique's garden. Le Café Dior and Monsieur Dior: Mauro Colagreco Brings Botanical Dining to Saint-Tropez
Colagreco, best known for Mirazur his three-Michelin-star restaurant in the coastal town of Menton, developed menus for both eateries that draw directly from his philosophy of micro-seasonal cooking and his long-standing practice of growing produce according to the moon's cycles.
"I've often said that at Mirazur, we have 365 seasons," Colagreco said. "In all my projects, I try to respect this micro-seasonal approach."
His connection to Dior runs deeper than aesthetics. A UNESCO goodwill ambassador for biodiversity, Colagreco instinctively found common ground with Christian Dior's documented love of nature and the botanical language that threads through the house's couture archive. He first visited the Dior archives when preparing for the opening of Café Dior at the brand's Gold House concept store in Bangkok in 2024.
"On my first visit, I was almost moved to tears because you see not just his work, but also the interpretations of all the different artistic directors of the house," Colagreco said. "Christian Dior lives on beyond his designs thanks to these people who have kept his legacy alive."
Menus Built Around Couture References and Local Produce
Colagreco translated Dior's couture vocabulary directly into individual dishes. The Champ de Trèfles a starter of red prawn tartare topped with a pattern of four-leaf clover forms, mirrors creative director Jonathan Anderson's Lady Dior Clover handbag. The Corolle dessert, a frozen parfait finished with delicate iced flowers, references the silhouette of Christian Dior's inaugural haute couture collection, presented in 1947. The bow-shaped Le Noeud, a coffee and chocolate dessert, comes closest to what the chef would describe as a signature, though he resists that designation.
At Le Café Dior, the daisy-shaped La Marguerite tartlet uses local apricots available for just 20 days a year. Mediterranean produce including eggplant, zucchini, tomatoes, peaches, cherries and figs will cycle through the kitchen in response to availability.
"That doesn't mean rewriting the whole menu, but the menu will evolve," Colagreco explained. "As different ingredients lose their flavor, or are no longer available locally, we're going to phase them out. Sometimes we tweak the recipe, sometimes we change it completely."
Dining Formats: À la Carte, Tasting Menus and Seasonal Courses
Guests at Monsieur Dior can order à la carte or choose from two tasting menu formats: a three-course Déjeuner de Soleil experience at lunch and a five-course Clair de Lune option in the evening. The garden setting, rattan armchairs, pastel parasols, the Mediterranean light of the Côte d'Azur, provides a backdrop that Colagreco said aligns with the idea of La Colle Noire, Christian Dior's private home with its celebrated Mediterranean garden.
Colagreco draws a clear line between haute couture and haute gastronomy, describing both as disciplines built on craft, attention to detail and the desire to trigger emotion. "The most obvious is attention to detail, which comes from the hand, from craftsmanship," he said. "I would say that perhaps the most important thing is a desire to trigger emotion."
A Chef at the Height of His Expansion
The Saint-Tropez collaboration arrives as Colagreco oversees 34 establishments worldwide and plans to open four more restaurants in 2026. He is also developing a boutique hotel in Menton scheduled to open in 2027. Earlier this year, he celebrated the 20th anniversary of Mirazur with a collaboration with Spanish culinary legend Ferran Adrià.
The Saint-Tropez opening extends a growing trend of luxury fashion houses partnering with celebrated chefs on hospitality projects where couture and cuisine intersect. Dior joins a list of brands including Louis Vuitton in pursuing this model at signature locations.
