Fairmont Mumbai has elevated Saif Shaikh to the position of Assistant Director of Food & Beverage for both Fairmont Mumbai and Roswyn, A Morgans Originals Hotel. The appointment expands his leadership responsibilities across the food and beverage operations of the two properties, where he will oversee commercial performance, guest experiences, operational planning, and team development.
With more than 11 years of experience in luxury hospitality, Shaikh has been part of the leadership team at Fairmont Mumbai and has played a role in managing dining venues, bars, banquet operations, and other guest-facing food and beverage functions. His elevation reflects the hotels’ focus on strengthening operational leadership and developing talent from within the organization.
Saif Shaikh Leadership Responsibilities as Assistant Director of F&B
In his new role, Shaikh will be responsible for overseeing food and beverage operations across restaurants, bars, banquets, in-room dining services, and event divisions at both Fairmont Mumbai and Roswyn, A Morgans Originals Hotel.
His mandate includes revenue strategy, operational execution, guest satisfaction initiatives, team capability development, and the implementation of new dining concepts and experiences. The position places him at the center of food and beverage planning and performance across the two hospitality assets.
Saif Shaikh's Experience Across Luxury Hospitality Brands
Saif Shaikh brings extensive experience from the luxury hospitality sector, having worked with a range of international hotel brands including Fairmont, Ennismore, Hilton Garden Inn, JW Marriott, Grand Hyatt, and Sofitel.
Throughout his career, he has developed expertise in multi-outlet operations, restaurant management, profitability improvement, revenue generation, team leadership, and hospitality operations. His background also includes involvement in restaurant openings and the management of diverse dining formats.
Previous Roles and Industry Background
Prior to joining Fairmont Mumbai, Shaikh served as Director of Restaurants & Bars at JW Marriott Pune. During his tenure, he oversaw the hotel’s restaurant and bar operations and was involved in the launch of Tao Fu, a Sichuan specialty restaurant.
Earlier in his career, he held leadership positions at Grand Hyatt Mumbai, where he managed prominent dining venues including China House and Celini. These assignments provided him with experience in large-scale food and beverage operations and guest-focused dining environments.

Commenting on his elevation, Saif Shaikh said that food and beverage operations today extend beyond dining to creating memorable guest experiences through cuisine, service, and hospitality.
