SINGAPORE, July 9, 2026 — Orangutan has launched a new Singapore-inspired tasting menu at Fortune Centre, introducing a contemporary take on local and Southeast Asian cuisine. The pop-up restaurant is led by chef Marcus Tan and operates inside Laut, offering a limited dinner-only dining experience from Wednesday to Saturday.

The concept highlights familiar Singaporean flavours through original techniques and seasonal ingredients, reflecting a growing interest in modern interpretations of regional cuisine.

Orangutan Singapore restaurant reimagines local favourites

Chef Marcus Tan, formerly of Kotuwa, has developed an eight-course tasting menu that blends Singaporean classics with influences from across Asia. Priced at S$98 per person, the menu focuses on approachable dishes presented in unexpected ways.

Among the signature creations are fluffy milk buns served with house-made otak butter, poached chicken liver paired with traditional rojak, chilled laksa broth with premium seafood, and braised wagyu cheek cooked with black bean and buah keluak.

Creative menu balances tradition and innovation

The tasting experience continues with a seasonal bean salad dressed in tofu dressing and crispy anchovies before moving to a comforting hee piow soup inspired by Japanese tori paitan. Dessert features brown rice milk panna cotta served with bitter chrysanthemum and pickled longan.

Each course draws inspiration from familiar local flavours while presenting them through modern techniques and thoughtful ingredient combinations.

Fortune Centre continues to attract independent chefs

Located inside Fortune Centre on Middle Road, Orangutan joins a growing collection of independent food and beverage concepts operating within the mixed-use complex. The location has increasingly become a destination for chefs experimenting with new dining formats and creative menus.

Operating as a pop-up inside Laut allows Marcus Tan to introduce his culinary vision while preparing for his future standalone restaurant.

Reservations open for limited dinner service

Orangutan currently serves dinner only from Wednesday through Saturday between 7 p.m. and 9 p.m. Seating is limited, with reservations available through the restaurant's official Instagram page.
