HONG KONG, June 20, 2026 — Pedder Chinese, a Cantonese restaurant inside the historic Pedder Building in Central, is serving a menu of reinterpreted classics that has drawn attention from international food critics, including a Bloomberg review. Executive chef Eric Chan leads the kitchen at the restaurant, which opened in the Grade I listed tower in late 2025.
The opening adds a high-profile Cantonese option to one of Hong Kong's most prominent commercial addresses, at a time when the city's fine-dining scene faces rising costs and strong competition. Signature plates include stir-fried crab with chili peppers in a claypot at HK$988 and drunken mantis prawn bathed in aged wines at HK$558, according to the restaurant and local trade coverage. Lighter starters include chilled cherry tomatoes with bird's nest at HK$98.
Other dishes feature a braised oxtail in red wine claypot at HK$268 and crispy skin chicken served two ways at HK$428. The kitchen emphasises wok hei, the smoky char prized in Cantonese stir-frying.

Chan brings more than 20 years of experience to Pedder Chinese, having previously worked at Hong Kong Cantonese restaurants including Art of Canton, Lei Garden and Duddell's. He has said his cooking favours clean, delicate and ingredient-driven flavours.
Chan has described the project as both a tribute to Cantonese culinary heritage and a step toward its future. The restaurant is operated by the Epicurean Group.
