Shiogamako, a conveyor belt sushi brand previously ranked Japan’s top kaitenzushi restaurant in 2019, has opened its first Tokyo outlet in 2026 at the Oimachi Tracks complex in Shinagawa. The new location marks the brand’s entry into the capital’s competitive sushi market, positioning itself in the premium conveyor belt dining segment with higher pricing and curated offerings.

The Tokyo outlet is located on the fourth floor of Oimachi Tracks, near Oimachi Station, and operates daily from 11 a.m. to 10 p.m. The opening represents a significant expansion for the brand, which had built its reputation outside Tokyo before entering the city’s high-demand dining environment.

First Conveyor Belt Format in Tokyo Market

The newly launched outlet is Shiogamako’s first kaitenzushi-style restaurant in Tokyo, although the brand already operates a traditional counter-style sushi restaurant in the Ginza district. The Oimachi Tracks location introduces a more accessible format while maintaining a focus on quality and ingredient selection.

The conveyor belt model allows customers to select dishes as they circulate, combined with an ordering system for specific items. Despite the format typically being associated with budget dining, Shiogamako has positioned this outlet as a higher-end alternative within the segment.

The brand’s previous recognition on Tabelog, Japan’s largest restaurant review platform, included a number-one ranking in 2019. Since then, it has remained within the top 10 nationally, reinforcing its reputation for consistent quality.

Premium Pricing Strategy Within Kaitenzushi Segment

The Tokyo outlet operates at a significantly higher price point compared to mainstream conveyor belt sushi chains. For example, a three-piece “Chokuso” set—featuring fish shipped directly from the market—is priced at 980 yen (approximately US$6.30). This set included varieties such as chutoro (fatty tuna), marlin, and swordfish during initial visits.

Another premium offering, the three-piece honmaguro (bluefin tuna) set, is priced at 1,320 yen, reflecting the restaurant’s focus on high-grade seafood. These pricing levels position the brand above mass-market competitors while still retaining the convenience of the conveyor belt format.

Lower-priced options are also available, including a three-piece hikarumono (silver-skinned fish) set at 480 yen and individual items such as shimesaba (vinegared mackerel), maguro, and negitoro priced at 240 yen per two-piece serving.

An average customer bill recorded during an early visit totaled 6,000 yen (approximately US$39), excluding beverages, which is estimated to be two to three times higher than typical spending at standard kaitenzushi chains.

High Demand Despite Weekday Opening Hours

Customer demand at the Tokyo outlet has been strong since launch, with queues forming even before opening hours. A weekday visit at 11 a.m. resulted in a waiting time of approximately 30 minutes, indicating sustained interest driven by the brand’s reputation and prior rankings.

The response suggests that Shiogamako’s positioning as a premium conveyor belt sushi concept resonates with consumers seeking higher-quality offerings within a familiar dining format. The combination of accessibility and elevated ingredients appears to differentiate the outlet in a crowded market.

The location within Oimachi Tracks, an entertainment and dining complex, also contributes to footfall, providing access to both local residents and commuters.

Quality Focus Anchored in Core Sushi Principles

Shiogamako’s menu emphasizes simplicity and ingredient quality, aligning with traditional sushi principles that prioritize natural flavors and minimal preparation. The brand’s offerings highlight premium cuts such as chutoro and bluefin tuna, with attention to freshness and sourcing.

Initial customer feedback has pointed to the quality of the tuna selections as a standout feature, reinforcing the brand’s confidence in its core ingredients. The presentation and portioning are designed to reflect a higher-end dining experience within the conveyor belt format.

This approach allows the restaurant to bridge the gap between casual and fine dining, targeting customers willing to pay a premium for better ingredients without transitioning to a full-service sushi environment.

Positioning in Tokyo’s Competitive Sushi Landscape

Tokyo remains one of the most competitive sushi markets globally, with a wide range of formats spanning budget kaitenzushi chains to exclusive counter-style establishments. Shiogamako’s entry introduces a hybrid model that combines affordability with premium positioning.

The brand’s sustained ranking on Tabelog since 2019 provides a foundation for its expansion strategy, particularly as consumer expectations for quality remain consistent in Japan’s sushi segment.

While the pricing may deter value-focused diners, the restaurant targets a segment that prioritizes ingredient quality over cost, even within the conveyor belt category. The Tokyo opening represents a test of this positioning in a market where both quality and competition are exceptionally high.

Shiogamako’s Oimachi Tracks outlet is now operational, marking a new phase of growth as the brand expands into Tokyo with a differentiated offering in the kaitenzushi segment.
