DUBAI — Salvaje Group Dubai has promoted Maxime Lejuez to Chief Operating Officer, elevating the French hospitality leader. His career spans Paris, London, New York and Dubai to full operational leadership across the group's three venues at Address Dubai Opera Residences.

The promotion comes ahead of schedule, a reflection of what Lejuez has delivered since joining the group as General Manager in early 2025. In his new role as COO, he oversees all operational aspects of Salvaje Group Dubai's portfolio, with responsibility for sustainable growth, concept development and guest experience across Salvaje, Arrogante and Amor.

Salvaje brings Japanese Latin fusion dining and entertainment to the group's identity. Arrogante offers contemporary Italian dining with a relaxed, intimate character. Amor runs as a high-energy nightlife venue. Managing three distinct formats under one operational umbrella requires the kind of range that Lejuez has built over more than a decade across some of the world's most demanding hospitality cities.

A Career Built Across Coya, Amazonico, Sumosan Twiga and Babylon Dubai

Lejuez's career trajectory before Salvaje Group includes leadership roles at COYA Mayfair and Amazonico London, two of London's most high-profile Latin-influenced luxury dining destinations. He also led operations at Sumosan Twiga in London and at Babylon Restaurant in Dubai, where he managed an immersive dining and nightlife concept and gained direct experience in entertainment programming, lighting systems and 360-degree venue management.

Earlier in his career, he worked in five-star palace hotels and Michelin-starred restaurants in Paris, where his foundational understanding of service, product knowledge and hospitality standards was formed. He has collaborated with culinary legends Alain Ducasse and Paul Bocuse during that period. New York added another market environment to his international frame of reference.
