SILVER SPRING, Md., June 1, 2026 — Easy Like Sunday, the Baltimore-based brunch concept known for its relaxed atmosphere and Southern-influenced menu, is taking shape in downtown Silver Spring after signing a lease for the 3,606-square-foot ground-floor space at Central Apartments, located at the intersection of Fenton Street and Wayne Avenue. Construction is underway at 8455 Fenton Street, with co-owner Antonios Kokolis telling local media earlier this spring that the team is targeting a May or June opening for what will be the brand's first location outside Baltimore.

The restaurant moves into the former home of El Sapo Cuban Social Club, which closed in late 2024 following the earlier suspension of its sister restaurant, Urban Butcher. For downtown Silver Spring's dining corridor, the incoming tenant fills a well-located ground-floor retail vacancy with a full-service, all-day brunch concept that has drawn consistent followings at its two Baltimore locations.

Easy Like Sunday operates two active restaurants in Maryland one at the Village of Cross Keys, which opened in 2023, and a second at McHenry Row in Locust Point, which followed in 2024. Both locations run Tuesday through Sunday from 8 a.m. to 3 p.m. The Silver Spring outlet marks the brand's first footprint in Montgomery County and its first step beyond the Baltimore city limits.

Co-owner Kokolis said the team sees downtown Silver Spring as a strong fit for the brand's family-forward identity. "We own the two locations in Baltimore, and we're excited to venture out into the Silver Spring area and open," Kokolis said. He added that while the restaurant operates a full bar, the owners want guests of all ages to feel at ease dining in. "Just because we have, like, a full bar… we still want people to feel comfortable with their families to come and dine with us and have fun," he said.

Easy Like Sunday serves American brunch and lunch dishes with clear Southern influences. Signature plates include ricotta stuffed French toast, short rib hash and a brunch burger finished with maple-syrup-cooked cowboy bacon. The Tuscan Bake a pork sausage and tomato preparation topped with mozzarella and fried chicken served with cornmeal pancakes and peach-habanero jam round out the kitchen's most popular offerings.

Vegan and vegetarian diners are served through clearly labeled options including roasted vegetable hash and seasonal vegan pancakes, reflecting a menu philosophy designed to accommodate varied dining groups rather than a narrowly targeted customer.

The beverage program carries equal weight with the food menu. Easy Like Sunday offers 10 specialty cocktails, mimosa flights, peach lavender mimosas and a range of non-alcoholic specialty drinks. The lavender maple latte has become one of the most recognised drinks at the Baltimore locations, according to Kokolis. The pink beetroot matcha latte has also drawn regular attention from customers at both existing outlets.

Brand Began in Charlotte Before Relocating to Maryland

Easy Like Sunday was founded in Charlotte, North Carolina, in 2020 by chef Sean MacCuish and his wife Anna MacCuish, along with Anna's cousin, Antonios Kokolis. After having children, the MacCuishes decided to relocate closer to family. Anna, a Baltimore native whose family operates the longstanding G&A Restaurant, grew up inside the city's food culture.

The couple sold the Charlotte location and relaunched the concept in Maryland, opening at Cross Keys in 2023. The Locust Point location followed a year later, extending the brand's presence across two distinct Baltimore neighborhoods before the Silver Spring expansion entered planning.

Despite a common assumption among customers, the restaurant's name does not refer directly to the Lionel Richie song "Easy." The owners have said the name grew out of conversations about the feeling they wanted the space to produce something slow, uncomplicated and comfortable, like a Sunday morning with nowhere to be.

Silver Spring Location Fills Vacancy at Active Residential Address

The Central Apartments building at Fenton Street and Wayne Avenue sits at a well-trafficked intersection in downtown Silver Spring, surrounded by residential density and street-level activity. A "Coming Soon" banner directing visitors to the restaurant's website went up earlier this spring ahead of construction beginning on the interior buildout.

The location places Easy Like Sunday within walking distance of the Silver Spring Metro station and the broader downtown retail and dining district. Kokolis noted that the neighborhood's family composition aligns with what the brand has built in Baltimore — a space where the mimosa flight and the kids' table can coexist without either feeling out of place.
